Ingredients
Chicken drumsticks: This is the hero of the recipe. They soaks up all the flavours from the sauce.
Brining Liquid – Salt, sugar is added to water to create a brine for the chicken. This makes the chicken so juicy.
Schezwan Sauce – you can use store bought or homemade schezwan sauce.


Step by Step Pictures
1)Start by brining the chicken. Take chicken drumstick, make few slashes all over the chicken.


2)Cover it with water, sprinkle salt and sugar over the chicken.


3)Allow it to sit in the briniing liquid for few hours.


4)Cover the bowl with plastic wrap.


4)Put this in fridge for few hours. You can leave it overnight too.


5)make a batch of my homemade schezwan sauce.


6)Instead of using homemade, you can use store bought schezwan sauce too.


7)Now take the chicken from the brine. Pat them dry with paper towel. Meanwhile Preheat oven to 220 degree C.
Now Place the chicken in a baking tray lined with foil. Brush the sauce over it generously. Place this in oven and bake the chicken for 15 mins. Now this seal the juices in the chicken.


8)Now reduce the oven temp to 180 degree C. Now take the chicken out, brush the chicken with more sauce. Bake for 15 more mins.


9)After 15 minutes. Remove tray from oven and brush the chicken with sauce. Bake for 15 more mins.


10)Now increase the oven temp to 250 degree C on grill mode. Brush a final layer of sauce and grill it for 1 min. This creates a beautiful caramelized texture over it.


11)Remove the tray from oven. Let it rest for 10 minutes before serving with your favorite dish.
