Whole spices:

  • 2 tsp jeera
  • 10-12 peppercorns
  • 4 cardamom
  • 8-10 cloves
  • 2 inch cinnamon stick
  • 10-12 curry leaves

Vegetables and other ingredients:

  • 2 onions sliced
  • 2 green chillies chopped , optional
  • 2 tsp ginger garlic paste
  • 4-6 tomatoes finely chopped
  • 2 tbsp dahi / yogurt
  • 1 cup basmati rice washed & soaked
  • coriander / dhaniya for garnishing

Dry Spices:

  • 1/4 tsp Haldi turmeric
  • 1/2 tsp Red chilli powder
  • 1/2 tsp Jeera powder
  • 1 tsp Dhaniya powder
  • 1/8 tsp Garam masala just a little
  • Salt to taste
  • In a cooker, add ghee. Add the whole spices, curry leaves and onion. Cook till the onion becomes golden brown.

  • Add green chilli and ginger garlic paste and cook for 2 minutes.

  • Add chopped tomatoes and salt. Cook till they become soft and mushy.

  • Add dahi and all the dry spices. Cook for 2 minutes.

  • Now add rice and water. Water is generally twice the amount of rice, but you can add a little more if you like slightly soft or moist rice.

  • Close the cooker and cook for 2 whistles.

  • Let the pressure release naturally.

  • Fluff the rice gently and garnish with fresh coriander.

  • Serve hot along with raita and papad.
