Easy Biscuit Cake Recipe one of the popular cake recipe also called as fridge cake. It is made using biscuits, chocolate sauce and frosting. This easy no-bake biscuit cake is a quick and delicious dessert made with digestive biscuits, cocoa powder, chocolate, milk and butter.

I made cakes in oven, cakes in microwave, cakes in pressure cooker so far, but this is my first recipe for no bake biscuit cake. It looks like a cake, taste even better than a cake, plus it is eggless, easy to make, even your kids can whip this up in minutes.

I used digestive biscuits to make this, but you can make this using marie biscuits or any of your favourite biscuits. And also the the icing on the outside, you can leave that out and just pour the cornflour mix on top and enjoy it like a pudding. But this chocolate coating, makes it tasty and it looks pretty.

The cool thing is, when you cut the cake, you see lots of layers on them and they taste so yummy and surprisingly soft and buttery. I have many many versions of this biscuit cake, will share all of them very soon.

No bake biscuit cake is a rich, chocolatey dessert made by using digestive biscuits, milk, cocoa powder, butter, sugar and cornflour. It is an eggless cake recipe and doesn’t require any oven. The best part is that the ingredients can be put together in less than 15 minutes and results in an amazing taste. 

The cake base is made by dipping the digestive biscuits in milk and setting it aside. A chocolate spread is prepared by mixing cornflour, sugar, cocoa powder, vanilla essence and milk in a sauce pan.

Cook them until it thickens and let it cool completely. Spread the chocolate mixture on each biscuit and stalk like a tower. Let it sit in the refrigerator. Once it is set, it looks and tastes like a real cake. 

Over the years, I’ve tried many no bake biscuit recipes like no bake biscuit log, chocolate coconut biscuit roll, no bake biscuit pudding, chocolate biscuit ball, biscuit bar and hands down this is one of the simplest and easiest recipes.

What I love about this no bake biscuit cake recipe is that it is one of the fun and easy recipes to make with kids. They love doing this recipe by dunking the biscuits in milk and stalking them like a biscuit tower.

Decorate it with kids’ favourite toppings like sprinkle, chocolate chips, chopped strawberry, chocolate sauce or with nuts. 

Ingredients

Biscuit : This is the star ingredient and forms the base of the cake. Any neutral or mild sweetened biscuits work for this recipe like marie biscuit, britannia nutri choice or graham crackers. 

Sugar : Sugar is added for the sweetness. Adjust the sugar quantity based on the sweetness of the biscuit. 

Cocoa powder : Cocoa powder gives a rich chocolate flavour to this simple dish. Use good quality unsweetened cocoa powder for best taste and flavour. 

Cornstarch : Cornstarch or cornflour is added to thicken the chocolate spread and result in a smooth texture.

Milk : Milk is used to mix the ingredients and creates a smooth creamy spread. You can use full fat milk or dairy free milk options like oat milk, almond milk. 

Vanilla essence : A ½ teaspoon of vanilla essence added to balance the richness of chocolate flavour. Make sure to use good quality vanilla essence for the best aroma. You can also try with other flavouring essence like almond extract, orange extract or coconut extract. 

Icing : Dark chocolate and unsalted butter are melted to form a glossy, smooth and rich chocolate icing. Pour this over the biscuit tower and refrigerate for 30 minutes.

Add on : Mix some chopped nuts in between biscuits like cashewnut, almond, pistachio, or walnut for extra crunch. 

Dairy free : Want to make a dairy free icing for the cake, then swap butter with coconut oil and use any dairy free chocolate. And also use dairy free milk like oat milk, almond milk for dipping. 

Topping : Try adding toppings like dessicated coconut, sprinkles and chocolate chips while serving.

Ingredients

1)take all your ingredients. This is a no bake just assemble fridge cake.

Chocolate filling or cream

2)First lets make the sauce for the cake. Take cocoa powder in a sauce pan.

3)Add in icing sugar. Instead of icing sugar you can use powdered sugar too.

4)Add in some cornstarch. This helps with the thickening of the sauce.

5)Add in a splash of vanilla extract.

6)Pour some milk into the sauce pan and mix well.

7)Mix until there is no lumps formed. Now place this on heat and cook until thickens.

8)Keep mixing so there is no lumps.

9)Now the sauce has thickened.

Assembling cake

10)Now lets assemble the cake. Take milk in a bowl.

11)Now take your biscuits and dip them one by one in milk for just 5 seconds.

12)Place it on a plate.

13)Add a dollop of the chocolate cream which we made.

14)Spread a thin layer evenly.

15)Now place another milk dunked biscuits on top.

16)Spread chocolate cream on top.

17)Now repeat this for as much layers as you want.

18)You can make them mini individual size or tall cake.

21)Now transfer this carefully to fridge and let it sit for few hours to set and harden.

Chocolate outer covering (topping)

22)Meanwhile make the chocolate glaze on top. You can use milk chocolate or dark chocolate. Take chocolate in a small sauce pan.

23)Add a knob of butter.

24)Melt it gently on low heat until chocolate and butter is melted. Set this aside.

Finishing Cake

25)Now take your set cake from fridge.

26)Pour the chocolate glaze on top and let it drip on the side.

27)Spread it gently using a spatula.

28)Decorate with sprinkles.

29)Place in fridge to set for few minutes.

30)Slice and serve.

  • Use parchment paper or aluminium foil to arrange the biscuits.
  • Mix the ingredients like cocoa powder, milk, cornflour without any lumps. 
  • For a fruity punch, add raisin, dried cranberries, chopped strawberries in between the biscuit layer. 
  • If you’re a coffee lover, then dip the biscuits in coffee liquid and arrange it.
  • Cool down completely the chocolate icing before spreading over biscuits. 
  • Let the biscuit cake sit in the refrigerator for at least 30 minutes to 1 hour. 

Storage & Serving

This no bake biscuit cake can be stored in the refrigerator for 3 to 5 days. 

Chill, slice and serve the no bake biscuit cake with chocolate sauce, whipping cream or with a scoop of ice cream of your choice.
