In this post, I’m sharing an eggless vanilla ice cream recipe that is easy to prepare and doesn’t require any ice cream maker. You can easily whip it using a hand beater or even with regular mixie. It is a commercial vanilla ice cream recipe made using cmc, gms which gives you store bought creamery style ice cream at home.

I wanted to try a commercial ice cream recipe which we get in stores. Finally got this recipe for my aunty and it turned out to be so creamy, just like the one which you get in stores. The main ingredient which makes this ice cream creamy is gms and cmc which you can get in shops which sells bakery supplies or look online.

What is CMC & GMS

GMS(Glycerol monostearate) is a food additive used as a thickening, emulsifying, anti-caking, and preservative agent. It used for stabilizing ice creams and are available in specialty food stores or bakeries.

CMC powder is widely used in the ice cream industry to make ice cream without churning or freezing at extremely low temperatures. It is used as a thickening, emulsifying, anti-caking, and preservative agent.

Ingredients

  • Full fat milk : Full fat milk adds rich, creamy flavour to the ice cream. The fat in the milk helps to make the texture smooth, soft and creates the base that is pure indulgent. 
  • Sugar : Sugar added for sweetness and also helps to keep the ice cream creamy instead of icy. Without sugar, ice cream would freeze too hard and be icy. 
  • CMC : Carboxymethyl cellulose ( CMC ) is a stabilizer that keeps the ice cream smooth and prevents ice crystals from forming. It also helps the mixture to thicken without churning. 
  • GMS : Glycerol Monostearate ( GMS ) is also another stabilizer and emulsifier used to give the ice cream a smooth and scoopable texture. 
  • Milk powder : Milk powder added for extra milk flavour and it also improves the texture of ice cream. 
  • Corn starch : Corn flour added to slightly thicken the ice cream and it also prevents ice crystals forming. 
  • Vanilla extract : Vanilla essence is the star flavour of this recipe. Use good quality vanilla bean or vanilla essence as it gives the classic, flavour and aroma. 

Step by Step Pictures

1)Take cms, gms, milk powder, corn starch in a bowl.

2)add ¼ cup milk to it and make it into a smooth paste. Set aside.

Make Custard

3)Take sugar in a sauce pan. I am using granulated sugar.

4)pour in milk over the sugar. Now place on heat and bring it to a full boil.

5)Now pour in the mixed cornstarch mixture and use a whisk to mix it really well.

6)Now keep mixing and cook until it comes to a full boil. It will thicken a lot. Now take it off the heat once it comes to a full boil.

7)Now take it off the heat and add in vanilla extract. Mix this really well. Set aside so it cools completely.

8)Once the mix is cooled, strain the mixture through a sieve and Pour this in a shallow container.

9)Place it into the freezer and freeze for 3 to 4 hours.

10)Now the mixture is semi frozen.

11)Pour this into to a blender.

12)Add in fresh cream into this mixture. Blend this for 1 minute to break all the ice crystal and make the ice cream extra creamy.

13)Now the mixture looks creamy and thick.

14)Pour this into shallow container to freeze. Keep in freezer for another 3 to 4 hours. Repeat this blending one more time for super creamy ice cream.

15)Once the second blending is done, return to freezer overnight. This is how it looks once frozen.

16)Scoop and serve. Look how creamy it looks.

Expert Tips

Mix ingredients first : In a bowl, combine CMC, GMS, cornflour and milk powder before adding liquid. This helps to prevent lumps and ensures a smooth base. 

Cook on low flame : Simmer the milk gently while stirring continuously to avoid burning or sticking at the bottom. 

Whip during freezing : Blend the semi frozen mixture once or twice at intervals to incorporate air and reduce ice crystals. This repeated blending results in a soft and creamy textured ice cream. 

Variation : This recipe is highly customizable that you can add chopped nuts, brownies, cookies or chocolate chips into the base after the final blending for extra crunch and flavour. 

Storage : Store the vanilla ice cream in an airtight container to prevent ice crystals formation. For best results, place a layer of cling wrap on the surface before sealing the lid. This also helps to keep the texture smooth and creamy.

Q. What if I don’t have CMC and GMS ?

You can skip them if they are unavailable. However, without these stabilizers the ice cream turns slightly icy. So, to improve the texture, whip the mixture 2 to 4 times during the freezing process. 

Q. Can I add nuts or other flavours to the base 

Absolutely ! You can add nuts, chocolate chips, caramel swirls, or brownie crumbs to customize the ice cream. 

Q. Can I make this without an ice cream maker ? 

Definitely ! This recipe is designed to be made without an ice cream maker. A hand blender or mixie works perfectly. 

Q. How can I prevent ice crystals ? 

To prevent this, cover the surface with cling wrap and store the ice cream in an airtight container. This helps minimize ice crystals formation and keeps the texture smooth and creamy.
