Veg Noodles Fried Rice Recipe is a simple Indo Chinese fusion dish that brings together both rice and noodles in one pan. They are tossed together with fresh vegetables and sauces to make a bold and flavourful meal. It is an easy and comforting dish that pairs perfectly with chilli chicken, chicken manchurian or chilli lotus stem.

This is one recipe which I tasted few weeks back when we dined out. I loved it to the core, the combination of rice and noodles along with the other sauces and stuffs was very tasty. We actually ordered a chicken version of this, but when I came home i decided to try a veg version and share it with you all.

Noodles are also just as versatile as rice. You can toss them into a quick stir-fry or cook them in a warm bowl of soup, they just easily adapt to different flavours and styles of cooking. Together rice and noodles make everyday cooking easy, quick and enjoyable. 

This veg noodle fried rice is a quick and easy recipe that comes together in under 30 minutes. It is perfect for busy days and also works well for special occasions, potlucks or even for kid lunch boxes.

This dish brings together rice and noodles in one pan, which is tossed with fresh vegetables, soy sauce and spring onions. I have made this as a vegetarian version, but you can easily customize it by adding vegetables like mushroom, paneer or even include eggs and chicken if preferred.

You can serve this dish with Indo Chinese starters like honey chilli potatoes, chilli mushroom, or chicken manchurian for a complete and satisfying meal. 

This is pretty easy to make, if you have any leftover rice, you can cook some noodles and toss everything up. This taste superb with lots of pepper on them. You can even add some green chilli sauce to make it spicy. But i like to serve with some chilli vinegar.

Ingredients

  • Basmati rice : Use good quality long grain basmati for a fluffy rice. It balances well with noodles and other flavours in the dish. You can also replace it with jasmine rice if preferred. 
  • Noodles : You can use any type of noodles such as veg or egg noodles. They absorb sauces beautifully and give the dish its taste and texture. 
  • Oil : Use any neutral flavoured oil of your choice for tossing the rice, noodles and vegetables. 
  • Onion : Onion forms the base of the dish and adds a mild sweetness when sauteed. 
  • Ginger garlic paste : Ginger garlic paste adds a strong aroma and gives a signature Indo Chinese flavour. You can also use freshly chopped ginger and garlic for more fresh flavour and taste. 
  • Green chilli : Green chilli is added for the spice and you can adjust the quantity based on your spice preference. 
  • Vegetables : I have added carrot, beans, capsicum and baby corn for the color, crunch and taste. It makes the dish more nutritious and filling. 
  • Salt and sugar : Salt and sugar are the essential seasoning required to balance the spicy flavours and make a well balanced dish. 
  • Pepper powder : Add freshly grounded black pepper powder for the heat. It gives the restaurant style flavour and taste.
  • Soy sauce : Soy sauce is rich in umami flavour and is essential for the Indo Chinese recipes. It enhances the overall taste of the dish. 
  • Vinegar : Vinegar adds a slight tangy taste that balances the overall flavours of the noodles and rice. 
  • Spring onions : Add a handful of fresh spring onions for the best taste. 

Step by Step Pictures

1)Cook noodles and rice as per package directions and set aside to cool completely.

2)Heat oil in a kadai. Add in ginger and garlic paste. Saute for a minute.

3)Add in chopped onions, green chillies and saute for a minute.

4)Add in chopped vegetables. I am using baby corn, capsicum, carrot and cabbage.

5)Stir fry on high for couple of minutes.

6)Add in salt, sugar, and pepper powder.

7)Add in vinegar.

8)Add in soy sauce.

9)Mix well.

10)Now add in cooked noodles and rice.

11)Toss through to combine.

12)Finally add in black pepper powder and mix well. Add spring onions and toss well.

13)Serve hot.

  • Make sure to cook the rice and noodles separately and ensure they are not overcooked. 
  • Allow the rice and noodles to cool completely before tossing with vegetables so they stay firm and not mushy. 
  • Always stir fry in high heat to keep the vegetables crisp and to achieve a light smoky Indo Chinese flavour. 
  • Once the sauces and seasoning are added, toss everything quickly and evenly. This ensures the rice and noodles are coated evenly for a balanced taste in every bite. 
  • You can also customize the dish by adding your choice of vegetables or sauces to make the dish more filling and flavourful. 

Storage and Serving

Store the leftovers in an airtight container. It keeps well in the refrigerator for 2 days. Reheat them on a pan by adding little oil to retain its freshness. 

Veg noodles fried rice tastes best when served hot. Pair it with Indo Chinese sides like chilli chicken, chicken manchurian or chilli lotus stem for a complete meal.
